It's Not Rocket Science #3: Yakhchal

How it worked

By 400 BC, Persians engineered ice-storage systems using underground canals (qanat). Winter water in shaded, high-walled channels froze overnight, protected from sun and wind. Once ice reached roughly 50cm thick, workers cut it into blocks and stored it in domed yakhchal buildings, sealed seasonally.

Design

Underground pits up to 5,000 m³, domed tops spanning ~11m, using natural stratification — warm air vented from the dome top while cool air stayed underground. Insulation: two-meter-thick mud brick walls coated with a waterproofing render of sand, clay, egg whites, lime, goat hair, and ash. Stepped exterior construction likely aided night-sky radiant cooling; coverings may have been removed at night to maximize heat loss to the sky.

Numbers

One cubic meter of water stores roughly 93 kWh of thermal energy through freezing.

Context

By 1870, Isfahan had numerous yakhchals serving both wealthy and poor residents; ice was sold in bazaars and used for food preservation and to make faloodeh, a Persian frozen dessert essentially unchanged since 400 BC. Related technology: wind towers (bagdir) that cooled incoming air using the same qanat systems. Why it matters for this archive

The archive’s Night-sky radiative cooling page traces a “prior art” chain back to 1958 (Yanagimachi). Yakhchal is the same physics — thermal mass, arid-climate radiative sky cooling, water as the storage medium — deployed at civilizational scale roughly 2,400 years earlier, entirely without instruments or electricity. It also reinforces the archive’s climate-dependency finding: Persia’s high desert is exactly the low-humidity, clear-sky environment the mechanism needs, the same condition New Mexico provides and South Texas does not.
